Justification is JUSTIN's take on a Right Bank Bordeaux blend: Merlot and Cabernet Franc from Paso Robles, aged 21 months in French oak. It is plush and full bodied, with black cherry, blackberry and cigar box, and a savory finish of dried herbs and leather.

Winemaking
Fermented in open- and closed-top stainless steel tanks and mixed twice a day, then aged 21 months in all French oak barrels, half of them new.
Tasting Notes
Appearance: Ruby red.
Nose: Red currant, black cherry and plum, with light floral and earthy notes. The oak shows as cigar box, pastry crust and vanilla.
Palate: Lush blackberry, black currant and strawberry preserves. Plush, well-integrated tannins carry into a finish of dried thyme and tarragon, star anise and warm leather.
Pairing
The winery suggests herb-crusted pork loin roasted with root vegetables, pan-seared duck breast, or a classic gourmet burger.
Serving
Serve just below room temperature. Opening it about an hour ahead lets it relax.
