JUSTIN's Reserve Cabernet is 100% Cabernet Sauvignon from Paso Robles, aged 21 months in French oak. It is full bodied and polished, with Bing cherry, blackberry, espresso and leather. It is delicious now and built to age for years.

Winemaking
Fermented in closed-top stainless steel tanks with pump-overs twice a day, then aged 21 months in French oak barrels, half of them new.
Tasting Notes
Appearance: Deep ruby, lightening at the rim.
Nose: Red plum, blackberry jam, cocoa powder and savory tea leaf, with earthy minerality. The oak adds vanilla, caramel and allspice.
Palate: Intense, youthful red fruit. Bing cherry and blackberry are layered with leather, espresso and nutmeg. The finish is long, with well-integrated tannins and enough acidity to keep it from feeling heavy.
Pairing
A steak straight off the grill or a deluxe burger. For a treat, the winery suggests a rich dark chocolate gâteau.
Cellaring
Drinks well on release, and the winery says it can age for a few years or even a decade.
