A dry, bright rosé made mostly from Syrah by JUSTIN, the Paso Robles winery Justin and Deborah Baldwin founded in 1981. Wild strawberry, watermelon and white peach, with a salty, mineral finish. Pour it with salads, seafood and anything off the grill.

Winemaking
The grapes are pressed as whole clusters and fermented cold in stainless steel tanks, the way a white wine is made. There is no malolactic fermentation, which keeps the wine fresh and crisp.
Tasting Notes
Appearance: Pale salmon pink with copper highlights.
Nose: Wild strawberry, apricot and orange zest, with sea spray and a little white pepper.
Palate: Red apple, watermelon, white peach and cranberry up front, then white tea and soft herbs. The finish is clean and fairly long, with red fruit, salinity and wet stone.
Pairing
The winery suggests a green salad with strawberries, fennel, radish, snap peas and walnuts in a Meyer lemon vinaigrette. It also works with shrimp, fresh goat cheese and prosciutto.
Serving
Serve well chilled and drink it young, while the fruit is at its freshest.
