Winemaking Process
The grapes for this blend are harvested at night to preserve freshness. During pressing, extended skin contact is used to maximize color extraction. The free run juice is separated by varietal, with each undergoing secondary fermentation in barrel:
- Cabernet is aged in a mix of new and seasoned French oak
- Petite Sirah matures in neutral French oak barrels
- Zinfandel is treated to new American oak barrels
All components are aged for 11 months before being combined into the final blend.
