About the Winery/Winemaker
Illahe Vineyards is a pioneer in sustainable and traditional winemaking in Oregon’s Willamette Valley. Known for its commitment to organic farming and minimal intervention, the winery employs historic techniques—including manual pressing, native yeasts, and horse-powered vineyard work. The Grüner Veltliner clone used in this wine was originally sourced from Austria, making its way to Oregon via a Hungarian fighter pilot. For this vintage, the grapes were soaked on their skins for 24 hours, then fermented in a 50/50 mix of stainless steel and acacia barrels. Lees stirring in acacia barrels added complexity and mouthfeel.
