About the Winery/Winemaker | Miquel Pons, a family-owned winery with over 250 years of history, is located in the heart of the Penedès region in Catalonia. Led by winemaker Joan Miquel Canals i Bosch, the estate champions low-intervention viticulture, using only estate-grown grapes and indigenous yeast. Their Cava is aged a minimum of 18 months on lees and disgorged without freezing the bottle neck—preserving the wine’s natural character and integrity.
