Winemaking Process | The 2021 Freedom Hill Vineyard Pinot Noir vintage in Oregon was exceptional, offering near-perfect conditions for growing Pinot Noir. The moderate temperatures and timely rainfall allowed for extended hang-time, resulting in beautifully mature flavors without excessive sugar accumulation.
Devona exclusively use the Pommard clone for this wine, an old-school variety that they believe truly expresses the unique character of the Freedom Hill Vineyard. After careful hand-harvesting on September 26, 2021, the grapes were treated with the utmost care in the winery. Fermentation took place in their specially named tanks (including one called George), adding a touch of whimsy to the meticulous process.
The wine was then aged for 10 months in French oak barrels, with 30% new oak and 70% one and two-year-old barrels. This careful oak regimen adds complexity and structure without overpowering the delicate nature of Pinot Noir. The result is a wine that beautifully balances fruit, structure, and elegance.
