La Zerba was founded by Livio Lorenzi in 1973, born from a generations-old passion for agriculture. It's a family-run operation, currently managed by Livio's daughter Grazia, her husband Andrea, and their son Luigi. The winery's name, La Zerba, refers to its location in Alto Monferrato (in the municipality of Tassarolo, Gavi) and means "uncultivated place" in the local dialect. The estate spans 12 hectares in the Ligurian Apennines-Piemontese hills of Gavi and is farmed using organic methods.

Tasting Notes
This Gavi offers a full mouthfeel with fresh acidity and flavors of crunchy green apple. The wine's maturation on fine lees for five months in stainless steel adds a pleasant yeasty kick on the finish.
Winemaking Process
1. Fermentation occurs in stainless steel tanks for one week at a controlled temperature of 18°C to preserve fruity aromas.
2. The wine undergoes skin maceration during fermentation.
3. After racking, it matures in steel tanks for about 5 months with repeated "bâtonnage" of the lees.
4. Final maturation takes place in bottles for at least 3 months.
